I'll add my vote for Mistborn. I'll also add The Expanse by James S .A. Corey and The Broken Earth by N.K. Jemisin (although based on what others are saying I need to read The Inheritance Trilogy by her).

I second Leviathan Wakes and the 9 novel Expanse series. Its one event where I think the series out does the literature. It is a great experience to read and watch and see the changes.
