I generally try to recreate the character. Last time I couldn't do that I simply added some rogue and fighter levels to a doppleganger and warned the DM.

This is exactly why I like to keep some kind of online record of every character. Currently, I'm enamoured with wikis, since it allows the players to easily post and update their characters. I ask my players to put their characters on in the new DMGII format, and then I can just save their statblocks for my own use if I need to make secret rolls or the like.
