Have you looked at resources such as the Tome of Horrors and similar books that make older monsters Open Game Content (and thus usable in FG&G)?

Yes, but it doesn't help because ToH is 3.X. Most of the missing monsters are animals and stuff that take longer to look up than actually write down.

Well, if they're animals then it's no problem to just make up the stats as necessary, right?
Also, isn't FG&G being built out of the 3.X SRDs? If so, then you can draw on any 3.X sourcebook to deconstruct whatever you need (that's OGC, I mean).

I'm using the OGL to use D&D-isms like Armor Class and Saving Throws. I need to cite ToH in some cases to use classic monster names but 2E is my reference because it went in depth with descriptions more than any other edition and I want to recapture that ecology/habitat design even if it means rewriting it all in my own words.

Thoroughly enjoying the read-through of the preview edition.
But just one thing I noticed, specifically under the "Priest" entry. The word you want is "tenet"
Obviously, "tenant" isn't going to throw up any flags with a spell check, but thought I'd let you know so you can have your copy-editor take another look-see.
Give you a holler if I catch anything else like that (if you want), but really liking the read so far.
