While people with martial arts training generally think they can beat anyone (part bravado, part positive thinking, part truth), it's generally true that of 2 equally built people, the guy with training has the advantage.

I don't decide to beat up people until I've read their fitness records and dossier on their martial arts training first.
 

The guy looks both fit and trained, and probably had a good presence/alertness.

Being in the ring (cage?) five times for scheduled bouts implies a lot of training, and practice fights, and, a very good fitness. Very probably, a very good starting physique (reach/strength/quickness), plus training on top of that.

I imagine someone with this level of training and fitness would act much much faster than someone with neither. And would know how to stay guarded.

A worry is the presence of a knife. A big sharp kitchen knife could turn the tables with a lucky cut. I don't imagine anyone in the fight had any armor; a stray cut could easily be debilitating to fatal.
