Different methods for different campaigns. Generally when I use rolling, I encourage my players to roll in order, but don’t mandate it. But with my current regulars I generally use point buy or array (player’s choice, as an array is just a fixed set of scores generated according to point buy rules anyway.)

Point buy or standard array, and at this point I’m kinda annoyed if a DM makes people roll. Point buy is not only faster, but it eliminates a host of problems that accompany rolling - unequally powerful characters in the same party, overpowered characters, underpowered characters, characters that don’t fit player concepts, etc.
