D&D 5E Would you use setting-specific classes?

We currently have a Cobalt Soul monk in our Exandria game. In an earlier FR game we had a Purple Dragon Knight who was actually a Purple Dragon Knight.

If I was playing in Dark Sun 5e, it would be as an Elemental Cleric. An Earth Genasi Earth Elemental Cleric. One of the chosen ones.
