Well, Z’Herbes is a slightly different beast from the usual gumbo. It’s not something most creoles even cook!
Think of it as a soup of leafy greens with meat included. No seafood at all in any version I’ve seen.

Been watching a few of this fellas food videos as a couple. His videos on halal trucks look kinda interesting.
NZ Turkish over night kinda similar to some of those halal trucks.
Lamb shish kebab with hot sauce.
In Katz's pastrami on rye sandwichs in NYC look interesting. To much meat perhaps and at $25 usd kinda pricey. Would like to try as a one off. They're roughly a pub meal, dessert and a drink or two in price.

A pizza crust- like most starches- is more of a flavor delivery system than a strong flavor unto itself. If you can put it on a potato, you can serve it on noodles, bread, bagels, pizza crusts, French fries, yucca, etc.
