I dont think there is any reason why Half-Elf should have dominated like it did with floating ASI in BG3 by default.

I don't know that it has established that it doesn't. However, Dwarf-Elf or Dwarf-Orc hybrids are definitely established, though Dwarf-Gnome, Dwarf-Halfling, and Dwarf-Human have an even firmer foundation in lore stuff.

More variety is more better.
