Not always, you can eat cucumbers with the skin on. Good question about why the skin is left on to make pickles but Im going to guess so they hold their shape and dont turn to mush while pickling, which can take up to a month.

Because, folks, there are several kinds of cucumbers out there. Some varieties have tough waxy skins that aren't good eats, and many folks peel them.

Not all cucumber varieties are good for pickling.
