It's stated that Chessenta, Mulhorand and Unther are ruled by "living gods"; part of me wonders if they may retcon the Mulhorandi and Untheric pantheons to no longer be literally from Earth. I also wonder if the Greek gods are going to pop up in Chessenta, or if Tchazzar somehow became a living god again and took over the whole country.
Oh, it's Tchazzar.

They appear to be giving some coverage to Untger and Mulhorand, but they also have a pretty strict no real world religions policy now...just curious how that works out.

It's not gone folks, they didn't mention every city states or nation in each region. Heck they didn't name any at all in some of them. Doesn't mean me say The Vast or Hartsvale has been eliminated. Those were blurbs not comprehensive lists of independent regional powers.

This. That general map isn't terribly detailed (I see quite a few places that aren't on it that should be), so if something is missing, it doesn't mean it's gone forever - it could just have been skipped over during the map making process and will actually be in the actual books. And there are a lot of exclusions in the places mentioned in the blurbs - Turmish and Chondath aren't mentioned in the Vilhon Reach section, even though they are the two biggest countries in the region!

Tell that to Mielikki and Loviatar.
Again, like Tyr...extremely decontextualized.

The Mulan pantheons are a different situation, and rhe project lead for the Forgotten Realms books actually wrote an extended passage in his 50th anniversary OD&D project about how problematic the real gods were in OD&D ro explain why they didn't reprint that product.

I doubt that very much. It's more likely they now count it as part of Unther given that Enlil, the Untherite Head God saved both of their biggest cities and many Dragonborn refugees, and they took in Untherites who'd left Gilgeam's forces. It's kind of taking on the flavour of a civil war between Untherite Gods.

Also note every Mulan God is gone from the list of Faerunian Gods, Sharess/Bast, Hoar/Assuran, Tiamat, Bahumut/Marduke all not on the list. We know Gilgeam and Enlil are around, but also not on the list. Could be seeing the rebirth of the Mulhorandi and Untherite Pantheons, or something stranger still, a unified Mulan Pantheon? Could more Mulan Gods get resurrected?
The list of deities on the DM Screen are specifically "Faerunian", so there might be supplemental list in the Old Empires section.

Don't all the Mulan gods have secondary "non-Earth" names available for use as well? Granted, I don't think using the actual Sumerian/Babylonian deities would rock the boat much. The Egyptian ones, however, do have the potential of causing a bit of a fuss if used...

Here is Tondro's commentary on real world religion in OD&D:

Worth noting, too, that the last product WotC released which referenced clearly real world deities (as opposed to the vague allusiona in Tyr and other FR deities, or Bahumet & Tiamat) was Spelljammer, over 3 years ago now.
