I want to include what my players are interested in. But what's being demanded is that DMs not being able to say "No" and have it be final.

The DM's the one doing the work of running the campaign. If the player wants something different they should find a different campaign.

yes, both the player and DM are not a good fit if they want very different things. Either one is free to find a better match

Players who actually want to play the same type campaign as the DM create a more cohesive campaign.
