I feel like having a lot of repair spells on it could help, maybe somehow put entropic shield on it? have it have an advanced form of obscuring mist to hid it. a speed boost to run away, a teleport? an aura of dispel magic or spell resistance, control weather or repulsion. quench, wind wall...

im not sure what u really mean by map tools but I would be very interested in joining=)

animate object? assuming the npc isn't a spellcaster perhaps a gun with the animate spell on it already? with a set amount of casts before its gone? do u want the party to be able to use this gun afterwards?

see, that's what I like! I've always liked the idea of players using other advantages, unfortunately our last gm didn't do that, he never gave us a fight where we would need to do that. so im worried that the party wont know what to do. and I don't want to tell them to do that, unless I have to...

if I were to do that how would I make appropriate mobs? the party will only be 3 people all cr 1. so would I only put 3 people in the caravan?

I also like this idea because then I can always give them npc help by just saying "he is a specialist to help u on your mission" im just not sure its a good scenario for 3 mages. also, I want them to feel like they are in control, which I don't feel like they will have with someone giving them...
