I would categorize them in the following way:
Arcane: as you said it comes from the understanding of the rules/laws of magic and main practitioners include wizards and artificers.
Divine: magic that is granted from the gods (no matter how present or absent they are from the world), from faith...
In the dnd next playtest all subclasses started from level one at some point, but then the designers decided that they wanted 1-2 levels to be introductory or tutorial levels where the character is not fully defined or has a specialization yet so they bumped them to level 3.
Following that...
1. Fix the ranger.
2. Crafting rules.
3. Subclasses for all classes start from level 1 and all classes get subclass features at the same levels.
4. Remove perception as a skill and make it similar to how initiative works but still based on WIS.
5. Make concentration based on INT.
6. Remove stat...
Converting the DnD 5e rules from tabletop to computer RPG format will provide a lot of interesting feedback to WotC for what works and what is broken, which I hope they use to improve this edition and create a better edition when that time comes.

I really like how the bard turned out. However, i still think that the AA fighter should get more uses of the ability per short rest, this way it feels too restrictive. Maybe, change the name of the sorcerer subclass to radiant soul? :)
The main problem of the druid unearthed arcana is with the theme of the subclasses.
The fey wild druid, being the only one whose abilities fit with the subclass description. However, I would prefer that this druid would focus either on the “wild growth that overtakes civilization” or “crazy...
I am just saying that the non-combat favored enemy part could be made to an early level ranger class feature that applies to all creatures and frees up space for another ability at later levels. Personally, I would prefer if the tracker/hunter aspect of the ranger (outside the hunter subclass)...
I am not strongly disagreeing with you in both of the things you say, regarding favored enemy always being part of the ranger and that it shouldn't be made a big deal when FE is not useful in a particular situation.
