I read if an animals intelligence score goes higher than 2, its no longer an animal. So how would (lets say a bear for example) act if his Intelligence went from 2 to 12? Would he be able to talk? Would he turn on his master? What kinds of things do you see realistically goin down?

My players and I just maximize the HD's. Like a Succubus has 6d8 so we just read it as 6 x 8 (+ their constitution of course). Saves time, and the wizard will never have more HP than the fighters (unless for some odd reason his Constitution score is through the roof O_o).
