Is the D&D cook book not one of their best sellers? The obvious answer here is a Delicious in Dungeon collaboration or their own take on that if the licensing isn't possible.

In the image with all of the artificers they have a Battlesmith, Alchemist, Armorer and Artillerist depicted but the 4th character out of 5 is different. Does that represent the base class or does it hint at an unrevealed subclass?

No, those rules are specifically for monsters. Spells like Enlarge and the Rune Knight specifically state what effect they have on damage. Being Large means you threaten more squares which is good for feats like Sentinel. It also means you can grapple targets one size category larger than usual.
