dragonlance has a lot of minotaur stuff. Offhand I can think of the novel Land of the Minotaurs and a supplement called Taladas that is all about Minotaurs.

I use Jamis Buck's NPC generator all the time. I have e-tools but find it slow and a little unwieldly. I use a lot of excel spreadsheets of my own devise.

The Hybsil in the Monsters of Faerun compendium would make a good Celtic flavor beastie. Maybe more benevolent, but would make good NPC's and add flavor. Also any lycanthropes, werewolves, wereboars, werebears and such.
