    I agree with Green Slime. 1"=5 feet works fine. This is the actual size of the "standard" DnD grid, so any templates you may have sould work as well.

    Once their BAB hits 3 (as in, next level), combat expertise will give them +3 AC as part of an attack action. I'm reasonably sure you can do this while casting, though our groups tendancy to ignore the rules makes me doubtful. Shield+mage armour=AC19 and no magic missiles

    Well, my iconic Elf has realoly high stats. He's been named the James Bond of Elvenkind by the other players. He's fun, but eventually it gets old. Otherwise, I normally play characters with average Str and Con, high Cha and Int, lowish Wis and reasonable Dex. So it depends.
