Heck, I rarely hand out stats to any but the most important of NPCs. If there is a fighter that they go up against and needs stats, I doubt it matters what his Dex is but I might say he has a +2 (or higher if he is high level or something).

One of the greatest 'pros' you can put on the list is this: bring lots of food and drinks. Invest in a cooler. Put ice in the cooler. You will leave the con having felt so proud of yourself for being able to get a cheap drink at midnight if you so chose.

I dunno. I kind of like the stat blocks, myself. Though perhaps a compromise could be made and just include them all at the end for those who want to see page after page of rules, uninterrupted by some stat blocks.
