I make most rolls in the open. The secret stuff is usually employed on stealth and bluff checks.

If you are DMing, don't worry! Just give your critters Step Up (as was mentioned above) and use the same tactic with your archers/casters against the melee PCs and you are done. Alternatively, use enemies with reach.

There are no "facing" rules in PF. By RAW, you are aware of all the attacks made against you unless otherwise specified (the enemy is hidden from you, for example). So unless you want to make a house rule, this is how it is played.
