    I'll second the vote for Warhammer FRP. If only I had the time for that in addition to my D&D campaign! I was a fan of Rolemaster for a time as well. Some of the books, such as Gamemaster Law and Treasure Companion, still are very useful for any fantasy RPG.

    I'll second the suggestions of Morrowind and Knights of the Old Republic. Excellent RPGs. I don't know of any good Civ or MOO type games for XBox. Halo is really good; it's an FPS, but I'd still recommend it. MechAssault is good too, though, again, it's not an RPG or RTS.

    If you right-click on a program's icon, select "Properties" and the "Compatibility" tab, there's a checkbox for "Run in 256 colors". Not sure how well it works, but you might want to try it.
