Average person can do a fine job of crafting stuff without being high level.
• +2 for 14 in the relevant stat (seems pretty reasonable).
• +5 for skill ranks (we'll say he's level 2).
• +3 for Skill Focus: Profession (whatever).
• +2 for masterwork tools related to the profession.

That's a result of bad DMing, not a bad game. If the game's expectations are high lethality / low survival, then the DM should have the players roll up backup characters and plan accordingly. (DCC's "funnel" comes to mind.)
Heroic Option: Roll 1d20. On a roll of 10+, you win the fight. On a roll of 9 or less, you reroll.
Old School: Roll a saving throw. You die anyway.

Looking at a monster should, in general, give you some idea of its AC. A dragon covered in inch-thick scales? Probably around AC 20. A fat wizard? About AC 9.
When are we getting this rules update, at the end of the month? Or are they shooting for a Thanksgiving / Christmas update?
This isn't a bad idea. I would say that you get a bonus to your skill and, as you increase your mastery, you have minimum dice rolls.
I certainly hope we aren't going back to that kind of system. That's going to sour me on 5e very quickly. I'm going to be running the updated Caves of Chaos playtest at some point, and I'm considering dropping character AC by 1-2 points across the board to compensate for the junk to-hit numbers.
It seems the developers still aren't factoring weapon proficiency into monster attack rolls.
Bugbear: +2 attack with 15 Strength (morningstar), +2 attack with 14 Dexterity (javelin).

What I'd suggest doing is varying the Strength improvement by the base Strength score of the user.
Strength of 8 or less: +8 bonus bonus.
Strength of 9-13: +7 bonus.
Strength of 14-17: +6 bonus.
Strength of 18-20: +5 bonus.
