This is exactly why I don't like and don't DM regular dungeons. I do enjoy a good stronghold every once in a while or a dungeon inhabited by crazy undead but otherwise I really like monster ecology.

If you allow the monsters to do this I think it is reasonable. Might change the dynamic of combat but cold work.

Why is it a kitchen sink today? I don't see any changes since 3e. Actually I've started reading into 2e guides and for me it looked even more kitchen sink at that time.

I voted fine but in my experience advancement is dull only if you try to plan a character development during character creation and plan your character from level 1 to 20. I tried that it was dull. When I didn't plan out the advancement just picked stuff on the fly it turned out to be much better.

I think most people's problem is that there are very high level personas in the FR setting who are basically way cooler than your PC will ever be. When does your PC ever get to level 29-35? Not in my games, not really. When does your PC ever get rescued by Greater Deity? Not in my games, not...

I would still find the current age the most interesting.

Casters should probably roll a Wis check followed by an Int check to be allowed to pick the most useful spell then remember the spell.

I find these supplement the forgotten realms wiki nicely while giving a chance to take a break from making your own adventures if that's your thing.

There is an epic boon in the DMG where you don't age. So technically ageless is RAW. :) Also Merlin looks a bit underpowered compared to Elminster.

I don't have any problems with gnome paladins. Stat wise they are almost as powerful as other races and are able to hold their own. So yeah I encourage my players not to be afraid of preceived racial roles. I'd welcome cannibal* halflings or gnome paladins any day. *as in very angry
