The difference is that FMA Brotherhood follows the storyline of the Manga. (Which IMHO is better) The first series followed the manga up to the visit to Rush Valley and then it branched into a whole different story with an ending... the FMA Manga isn't over yet. And if you liked the first Anime...

Voted Minotaurs, they're simply brutish monsters... I can't picture them socializing or doing heroic deeds... One thing is an Orc or Gobling turned good... A Minotaur? Sorry, stick to your labyrinth...
