Based on a quick look, it seems like a stone giant could squish a 5th-level wizard in pretty short order, if everything goes right for it and wrong for the party. That being said, it also roughly looks like it shouldn't be a TPK either, if the party can bring some firepower to bear. Cheers...

Shadow Dragon appears to be a template, so I think the idea is you might run up against a Shadow Adult Red Dragon, or something. I'm personally not terribly happy about keeping around both fairy dragons and pseudodragons, but maybe that won't be such a big deal once I actually see them.

It's modernish, but I think that's just a problem on the demand-side; there doesn't seem to be any engineering issues with pulling it off in antiquity that I can think of. Marbles are probably a fine way to approach it; I might also go with some sort of hard round seed of about the right size.

The main effect is that encounters are now quite a bit easier for the PCs -- they're hardly ever going to face crits, and when they do, they know there's a pretty sweet payday at the end of combat. If that's what you're trying to accomplish with this house rule, good job. You're probably also...

Their susceptibility to blunt trauma helps here. Zombies, on the other hand, just need a whole lot of whacking. Studded Leather being AC12 is still freaking me out a bit.
