You can only bluff PCs if you, OOC, as a DM, can pull it off. The only way they can see through it is (A) their OOC gut feeling or (B) asking for a sense motive roll. If you don't have a good poker face, don't rely on NPCs with high bluff scores.

Going back to the OP's question... Both classes are very potent, even in a core only environment. Strong HP: D8s are almost as good as it gets. Ability Scores: Druids need only strong Wisdom and Con. Clerics have bigger problems with MAD, but they aren't impossible; 14 STR, 12 DEX, 14...

Cloistered Cleric could be an option as well, with proper domain selection. More "bookkeeping" spells/skills than face skills, but the high SP, access to all knowledge skills, and casting in armor is handy.

There are plenty of counters: A few ranks in tumble, the Spring Attack chain of feats, range weapons, reach weapons, spells, swarming the knight to use up all of his AoO, and so on. I think its fine.
