I like 5E and play it a lot. But having played SotDL, too, I would argue that it's easier to learn than a modded version of 5E.

If you want to merge D&D 5E and WHFRP...how about Shadow of the Demon Lord? I'm running a campaign right now and it gives a nice gritty feel while being super easy to learn.

I basically alternate between what you do and what I said I do, depending upon what is most appropriate. Sometimes it's better to let a full scene play out before cutting to a new scene, other times it's really suspenseful to intercut between both scenes simultaneously.
