Sounds mostly like an issue for those who only played wizards in 3e at their zenith of power. If you played wizards at low levels in 1e or 2e the 5e wizards seems awesome. If you played a 4e wizard you are already used to being in line with the other classes in terms of power level across tiers...

So far the 5 books in my group are holding up fine. Looks like things are trending in the 10% range which is waaaay too high, IMO. WotC might want consider another printer or going with a sewn binding.

There is definitely room for more fey and beasts too. If you don't want to be a dinosaur druids begin to run out of beast forms at 9th level hopefully the dmg will have guidance on a dire templates or advancing monsters in CR.

Are there any templates that increase CR or advice on how to scale monsters up to increase their CR?

My current druid wears hide and uses a shield with a decent dex(14) fro an AC of 16 not bad really especially since it is possible at level 1.
