Yeah try R20, some GMs have trouble filling their one shots. I don't run 5e at the moment but I do run PF one shots relatively regularly. Filling one shots spontaneously is difficult but the pre-planned ones usually do fill.

Thispossibly means there won't be many short adventures available soon. Pity, as I only start on APs once they are completely published.

I've always added multiple universes, as in Golarion to us is just one more prime world same as Faerun, Tellene etc. So that was never an issue. Starfinder will be an extention for us, to be able to play modern and futuristic games with PF better. At first, I was excited about a space world...

One of my players got the hands on the rules it seems so we might just do it. But I prefer to run with the pre-made chars. As we've seen in the opening adventure, they are no guarantee of a balanced skill set in the group though.
