Are you trying to bring him back as a zombie or as the fighter? If you're trying to bring back the zombie, then Raise Dead makes sense. If you're trying to bring back the fighter, than I would go with the advice from the Monster Manual.

You only get one bonus action per turn, so if you are using a bonus action to cast the spell, then using the weapon to strike, you don't get the unarmed strike bonus action.

There's the evil dragon that needs to be dealt with as well as the big bad that did the ritual. I think you've got a great way to continue on the campaign or start a new one.
