    Just because it's written with the assumption that most PCs are not normally of huge size doesn't mean it's poorly written. If the rules covered every corner case, each spell and power description would be ten times as long. And huge PCs, which almost never show up, is very definitely a corner...

    If the NPC has 5HD or more, get a friendly cleric to cast Imbue with Spell Ability on the NPC and grant him a Shield Other spell. And then get the NPC to cast it. The NPC can also get two 1st level spells to cast, so either give him healing ones or buffs for the bad guy.

    Ignore levels and what the PCs do in-game and just award them the appropriate amount of XP per session to keep them advancing at a speed you are comfortable with.
