Thanks for all the answers. I also have seen a mix of both from both players and DMs in FTF gaming. Third person definitely seems preferred in PbP. I don't think there's a right or wrong way as long as you have fun, of course.

Titus definitely has some ideas, but I wouldn't expect them to be realistic at this time. :D Maybe sometime down the road... For now we just have to get the site and the basic wooden buildings laid out, so if you have a sketch for that I'd be interested in seeing it. Thanks!
