    The only mention of 'shield' was the mistaken characterization of the bonus as a 'shield bonus' instead of a '+1 bonus to armor class' by Balord. This being said... the shield would stack with the armor class bonus, as they are different AC categories.

    I say the Dex bonus is kept. Have you ever seen a little kid take a hard tumble? 9 times out of ten, they cry a little and then just get up, none the worse for wear. Watch a 25 year old take a spill that bad, and you'll be watching someone break or dislocate a number of bones.

    It would be awesome for roleplaying if your lumberjack were afraid of heights, but was really gung ho about his profession. (In terms of dice, you could get a +2 to climbing up and a -2 to climbing down or something). I imagine it would be a lot of fun to play.
