You can not move-attack-move while mounted without Ride-By attack.
The horse uses it's movement which you are part of. Basically you pretend your movement is now the mounts speed.
Allowing this would virtually destroy the reason for a feat.
It's not like Polymorph anymore.
In 3.0 you get the Str, Con (no change in HP), and Dex stats of the animal and the attack routine regardless of your BAB.

I'd say when you go into the AMF you become fatigued, walk out and your Raging again until the spell expires. IMHO the fatigue is due to magic induced Rage but you're still raging and suffer the mundane (non magical) effects of raging.
You're right Embrace the Wild doesn't change your appearance. The spell component is part of the animal your mimicking and you have to collect it from the animal yourself.
Even with making you look like a freak Blindsight for a second level spell IMHO is too powerful.

Just as if you have 4 ponts of a Con drain and Endurance wears off. The stat damage doesn't just go away because spells change the stat itself.
Think of it as a spell duration.
Duration of one round means I cast (breath) and then next round on my action it's not in effect anymore so I cast (breath) again.
