They should add DEX to damage. That's part of the monk martial arts feature at first level. EDIT: I should clarify. The 2 regular attacks and the monk bonus attacks should add DEX mod damage. The off-hand weapon damage would not.

It does. It also helps clerics and druids prepare even more spells. Adding rituals without needing to prepare them adds to the overall repertoire and also having an ability score boost with it is worth the level gated feat.
