    What stands to go catastrophically wrong....

    I would imagine, not a thing. Frankly, you might not even notice. It's possible that some of the NPCs in those adventures will have strategies laid out based on spells that have changed (namely, haste), but that's easily ignored. (Haste is still arguably an OK spell for them to cast in 3.5.)...

    HELP - I love beautifully crafted maps but...

    I wouldn't worry about it. No one knows but you. I'd keep the paper maps, though. You'll want to have a reference for yourself after the battlemat's been erased. Plus, the PCs could come back to the same place again, and you'll want it to look at least familiar when you redraw the battlemat.
