Mike Schley & Sean MacDonald made the maps for PotA available for sale pretty quickly. (Granted, buying all the maps cost more than the book, but it's a lot better than nothing.)

When I made these, I found that to get the scales to match up right within printable boundaries, you actually need 7.5 hexes per inch.

The standard rules aren't clear on this. The simplified encumbrance sheet does specify that worn clothing doesn't count toward encumbrance.
Check the latest version—it includes a note about Large and Tiny creatures. (Small creatures actually have the same carrying capacity as Medium ones.)
Yes, but in game terms, a bandit, a guard, and even a commoner are proficient in the use of their default weapons. (MM page 9: "Assume that a creature is proficient with its armor, weapons, and tools.")
PHB page 159: Skilled hirelings include anyone hired to perform a service that involves a proficiency (including weapon, tool, or skill): a mercenary, artisan, scribe, and so on.
By the book, an Adult Green Dragon and two Young Green Dragons are almost double the recommended difficulty of a Deadly encounter for six level 10 characters, so yeah, something's not right.
That's Mellikho Stoneworks—it's different from the location labeled as "Old Quarries" on Red Larch Surroundings and "Abandoned Quarry" on Dessarin Valley.
It's not used in the adventure. Probably left over from an earlier draft. Quarries in the hills are mentioned a few times (page 21, 27, 36) but there is no specific description.
Those variations sound like perfectly reasonable house rules that would make it easier to play. I might even use something like that myself.

The rules do not specify how the dwarf's racial feature works with variant encumbrance. Based on the rules for standard encumbrance, and similar rules in earlier editions, I think a good compromise would be to say that the dwarf...
Yeah, I'm not sure why the requirements are so high—In real life, I think you usually get most of your required water from food anyway. 5 lbs for a full waterskin comes from the equipment list.
