    Yes, sometimes I use the Organic Method of stat generation. 4d6 (drop the lowest) in order, at the end you can swap any one stat's value with another. So if you wind up with 18 int and 12 strength and you want to be a fighter, just swap those.

    If you look at my example, the Shadow does d6 str dmg, the greater shadow does d8 str dmg. Both creatures are size "medium". The Dread Wraith isn't draining d8 con (instead of d6) because it's "Large" ...it drains more Con because it has a higher CR and is a tougher monster.

    No, they still can't take it. If you look at Shadow and Greater Shadow, both are size "medium" and the Greater Shadow does 1d8 str dmg, regular Shadow 1d6. Again, Ability Damage is a "Special Attack" and a Supernatural ability, as such it cannot be augmented by the Improved Natural Attack feat.
