I had a character in a GURPS conspiracy/special ops/supers game (we've had a few of those) whose personality was pretty bland; he was a reserved guy, and it was by design. The D&D game I was in recently was rather hack & slash, so most of the characters were pretty nondescript.

Advancing something one CR is probably going to take more prep time than just picking another monster. IME with new groups, getting people to stay in the game is tougher than getting them to agree to play and show up once, so I wouldn't be surprised if there was some attrition.
