I consider sorcerers to be the "semi-natural adepts" of the arcane world.
Just like a fighter covers everything from gladiator, to town guard, to skilled duelist, to a simple fighter doing the best he can with a big stick, Sorcerers are the big bucket.
Having fewer spells made them "themed"...
You're cool.
There is occasionally an instinctive backlash here at EN world when a DM says "my story".
Even though the DM is usually talking about their shared game as a whole.
Me neither.
But I want to use the same "framework", I just only put the things important to the encounter in the statblock.
Here's an AD&D statblock I made for "Sleepysnakes"
Sleepysnake; AC: 8, HP: 10, Bite 1-3, save vs Para Poison (Sleep)*

The recent "defiler" UA looks more like blood magic to me. And it got me thinking.
My previous version of blood magic was too complicated. The defiler mechanic seems perfect.
But then I thought, extra damage is nice, but if you want to have "MOAR" power because you use evil blood magic...
Maybe lacking some nuance. Could even be done for the greater good, theoretically.
But you mentioned it being permanent and unknown. So...in a way, you killed one person and replaced them with one more to your liking.
Where does that stop?
So many little carboard pieces and counters that you had to keep them divided by type or organization in ziplock bags or you would spend your first hour sorting pieces.
edit:typo
Agreed that all those thing can happen. But not to extent you imply. It really depends on individual groups, and you always hear about the horror stories.
No shops burnt down here.
I feel you might be exaggerating for effect a little bit.
We never have played "endlessly murder anyone and everyone that gets in their way"
But we do kill Bad Guys.
