Without going thru the math specifically, you probably aren't missing anything. Even if what you wrote is wrong somewhere, there's probably another way to do even more damage with Conjure Minor Elementals - the scaling is super busted and WotC was asleep at the wheel when they let it thru.

It's not a saving throw to avoid being grappled, it's an attack roll by the grappler. Seems like you ought to be able to say you want to let them grapple you, but I'm not sure if that's actually RAW Anyways, seems like a bunch of work to do FAR less damage than you could do by just casting...
