That is a cool find. Another option: a vulture, also Medium size. Personally, I'd consider house-ruling a Tiny or Small size requirement for Find Familiar to better match traditional expectations of the spell, but I can't deny the fun of the idea.

If you have 2 levels as a Rogue or Fighter, the rule doesn't apply, since you add "One third of your Fighter or Rogue levels (round down) if you have the Eldritch Knight or Arcane Trickster subclass" (emphasis mine). You don't have the subclass at level 2, so rounding up from level 2 never comes...

But a level 2 Fighter can't be an Eldritch Knight, and a level 2 Rogue can't be an Arcane Trickster, so constructing the rule to avoid 1st- and 2nd-level Fighters or Rogues from contributing to Spellcasting capability is completely unnecessary. Just round up, and it won't matter until they take...

I get some of what he says, but he expends a lot of words in the longest paragraph of your quote complaining about NPCs with ability scores of 18-20. PC ability scores have gone to 20 for three whole editions now (heck, four editions if you count Dark Sun); that's over 25 (or 34) years now...

Note that there are two things called "Nimble". One is the original, essentially house rules for 5e D&D, which I haven't played. If you've seen references to 5e compatibility, that might be what you're thinking of. Then there's the Nimble RPG which grew out of those rules. I'm playing that now...

A technical point: elephants are Huge, so not eligible for Animal Shapes. You could turn the goblins into hippos, though, which have even better AC and HP than elephants. And also, there's room for more goblin/hippos!
