Just responding to the question of time passing. After a cursory glance around google and a few wiki's, it looks like time passes at the same pace in the Shadowfell as it does on the Prime Material Plane. This might not mean ALL of the Shadowfell, and so Barovia may be different, but I'm betting...

Yeah, I wouldn't set Shakespearian giants aside right yet. Ravenloft is a very Victorian-Gothic setting, so where better to have conflict with Shakespearian giants? At first I discounted the giants, but with a mind like Perkins at the helm, we should be expecting the zanily awesome!
