As an oddity to collect, didn't one version of the 3.0 PHB have a copy of e-tools in the back (on a CD)? Or maybe the DMG? I'll also agree Ghostwalk is good. Tome of Horrors Complete (I, II & III) by Necromancer Games is great - it contains many 1E creatures semi-officially converted to 3E. I'm also partial to the books that go more in-depth into monsters; Draconomicon, Drow of the Underdark, Fiendish Codex I & II, Libris Mortis (undead), and Lords of Madness (aberrations). I also kept the "terrain" books - Frostburn, Sandstorm & Stormwrack. They're certainly not necessary, but have a lot of good ideas for mundane and fantasical terrain to incorporate into adventures and stories. I'm mostly partial to Stormwrack, as it covers the sea, naval vessels and the like (go pirates!). If you like TSR's old campaign worlds, I'd suggest the likes of the Forgotten Realms Campaign Setting, Living Greyhawk Gazetteer, Ravenloft Campaign Setting, Eberron Campaign Setting (new to 3E) and the Dragonlance Campaign Setting. For 3rd party worlds, Ptoltus tops the list, and Scarred Lands, Kingdoms of Kalamar and Blackmoor (Dave Arneson's original campaign world) are notable. If you have any interest, several MMO worlds - Everquest, Diablo II ("To Hell and Back"), World of Warcraft got books for 3E.
