I found that one of the most tedious aspects of DMing D&D is writing up NPCs - especially the stat blocks - as well as applying templates or simple "advancement hit dice" to monsters. It's not as if the math involved is all that difficult, but there is a lot of it, and it takes a long time and is boring to boot.
And I guess I'm not the only one who feels this way.
EDIT: So I have created a d20 NPC Wiki where anyone can submit his own NPC creations and read and use the creations of others. You can find the Wiki here, and it is already growing rapidly.
So submit those NPCs (or PCs, for that matter) that you have worked out and written in electronic format. Other game masters will thank you!
