I assume there are some negatives to being a knight. Feels like they have there own set of laws and such so its possible the obligations they have are not worth the very small benefit of getting to be called Sir.

It's certainly worth noting that no one of high status seems to care about becoming a knight, just keeping lowborn folks out. So it's aspirational only up to a certain point in Westeros.

Realistically, it depends on where you take the stab wound. And realistically, even if you do get it seen to, you have a less than encouraging chance of survival because of the nature of medicine at the time. Which is why I look at these videos looking at action media as just entertaining rather than illuminating.
