Because they can. Insanity is not the only interpretation of CN, but it is a fairly valid one. Many folks play for escapism, and like that sort of thing.
 

I'm so glad that 3e redefined CN,so that it now actually makes sense!

Back in 2e days, to many players used CN as an excuse to do whatever they wanted to.

And on the Gripping Hand ;) , Chaos can more sanely be describbed as Lack of Socialability. Ie Chaotic characters, while they have family, religious beliefs, and a nationality, etc., don't even remotely believe in them as 'isms'. Ie they are so not devoted to these as ideals that they refuse to have anything to do with any groups that they can't all see at once. So, if they stretch themselves, adventuring parties, nuclear families, personal spiritual philosophies, and maybe anarchic village communes are in; but Adventurer Guilds, extended Clans, city or national governments, Catholic style religions, are out.

On the Moral Neutrality issue; unlike goody2shoes, they do not go freely to chase down harm doers ("pay me"), and they do not help the sick strangers, ("Pay Me to do this, or otherwise get me personally motivated.") And Unlike 3v!L doers, they do not normally cause unnecessary harm. But if they cause accidental harm, they generally have to be pushed or personally motivated to fix it, appologize, or otherwise deal with the mess they inadvertantly made.
