I don't like the everything crossbreeding with everything stuff. My explanation of PHB half-breeds:

Elves and Orcs have a defect that sometimes sometimes becomes dominant when a child is born. Sometimes called "thinbloods" or "runts" but more commonly known as "half-elves" or "half-orcs."

Unless the so-called "birth defect" reason doesn't fit (half-dragons frex), then I'll try to come up with something else.

If a human worships Grummish, his or her children will be half-orcs. If an orc worship a human god their kids will be half-orcs. Same with elves...
 

I find this idea interesting but I find the reverse far, far more interesting.

If any humans are within 50 miles of an orc baby the baby has a small (or even not-so-small) chance of being a half-orc.

The orcs don't react to this very well. Using the half-orcs as near slaves. They also do everything they can to prevent this from happening (hello raiding parties!)

Explains typical orcish aggression beyond the "They're evil!" level and gives a reason for the massive amount of half-orcs that convert to human society.

Something like this could also induce bloodlines, either the UA version or those from 5th Element. Drow induce aranea bloodlines in elves to sow conflict, giants try to "improve" the lives of little people or evil dragons want better slaves.
