Fiends and Celestials can die, such as in battle, they just don't age.

Only if slain on their home plane, otherwise they reform there. And with some mighty proxies their essence might merge with their homeplane in a way that even then they can reform over time (or when called by a unsuspecting offspring with an undefined communicate with granddad spell :) )
 

That could make for an interesting character. I would just have it function as normal, regardless of who or what the ancestors are.
