New monsters are nice, and I always liked the aurumvorax. Thoughts on this stat block?

Ferocious Grappler. The aurumvorax gains a +4 bonus on Athletics (grapple) checks.

Keen Smell. The aurumvorax has advantage on all Wisdom (Perception) checks that rely on smell. It can detect trace amounts of metals, gems, or minerals within half a mile.

Stealthy Hunter. The aurumvorax will attempt to hide and attack a creature by surprise. An aurumvorax has advantage on attack rolls against any creature that hasn’t taken a turn in combat yet.

ACTIONS
When an aurumvorax makes a bite attack that hits, it can grapple a foe of up to one size category larger than itself as a bonus action. The aurumvorax can make 4 claw attacks on a grappled target.

Bite. Melee Weapon Attack: +8 to hit, reach 5 ft., one target. Hit: 5 (2d6 + 5) piercing damage. Make a DC 16 strength saving throw or become prone and restrained. The target can repeat the saving throw at the end of each of its turns, ending the condition on a success.
Claw. Melee Weapon Attack: +8 to hit, reach 5 ft., one target. Hit: 5 (1d4 + 5) slashing damage.

AURUMVORAX LORE
Nature DC 20: Aurumvorax are very aggressive creatures, and lead solitary lives except when they mate. Adults typically claim the hunting area within a mile of their warrens, ruthlessly driving away other predators. In addition to fresh meat, aurumvoraxes are fond of gnawing on metals (particularly gold and copper). Their digestive system is adapted to handle metals, as well as gems and minerals.
A typical aurumvorax is only 3 feet long but weighs more than 200 pounds, for it is densely packed with muscle and thick, sturdy bones. Its coat is a mottled gold with coloured streaks indicative of what other gems, minerals, or ores it has been eating, while its claws are black and sharp. Its weight relative to its body size makes it a poor swimmer, and most dislike crossing water, though they can trundle along the bottom of still or slow water if necessary.
Adult aurumvoraxes are impossible to train, but their offspring are valued for training as guard beasts. A healthy aurumvorax kit can be sold for 5,000 gp or more to a discerning buyer. Female aurumvoraxes rarely give birth to more than one offspring at a time, and are ferociously protective of their young. The hide coat of an adult aurumvorax is heavily permeated with precious metals, minerals, and gemstones. It can sell for as much as 2,000gp.

Man, I always loved these little guys. If anything, the damage feels a little low. Although the four attacks would usually have advantage. As a solitary creature, you may want to consider legendary actions. A legendary bite could boost the damage some while making claw attacks.

One thing to watch with beasts is how it interacts with moon druid wild shape, but at CR7 you should be fine.

Looks good.

Animal stats above 16 are rare. It probably shouldn't have a Strength of 20. Ditto proficiency in saving throws, which are uncommon.
The bonus to grappling should probably be ”+4 bonus on Strength checks when grappling." Just advantage might work.

The grappling in multiattack is weird. That should probably be in the hit of bite. Still, being grappling, prone, and restrained is harsh. Just grappling might be fine.
Perhaps it could also trip people prone if it attack from surprise. Or hits a grappled target with a claws attack. Extra damage to prone targets could be fun too.
