FWIW, Ritchie Blackmore (Deep Purple, Rainbow) started a band with Candace Night back in the 1990s doing madrigals, etc., including the odd cover of modern music in that style. He even did some of his own past work, but it’s not necessarily as “authentic” as the others.

Funny story:

I try to go to the Connecticut Renaissance Faire as often as possible every year.
One weekend, I discovered the music of Blackmore's Night while looking around a vendor's tent. I promptly bought all seven CDs the vendor had for sale...

The very next weekend, I went back to the Faire...

...and saw Ritchie Blackmore walking around, dressed in the same costume as in one of the pictures in the liner notes of the CDs.
His family lives in Long Island, and they show up at the Faire every once in awhile. :D

I also had the opportunity to see the Harp Twins play at the Faire last year.

Also, you might want to check out the music of a band called CU DUBH.... They're a bagpipe and drum band that does their own heavy metal and world music-inspired songs.

Unfortunately, this was the ONLY bardcore cover of DFtR that featured cowbell, and ALL were instrumental.😡

However, one commentator (on another version) did work out some lyrics:
